After a year of expansion, Umániko, ILUNION Hotels’ innovative inclusive and sustainable dining concept, is now available in all hotels managed as Special Employment Centers (SECs). This model, combining accessibility, labor inclusion, and gastronomic excellence, has been established in key destinations such as Madrid, Bilbao, Barcelona, Valencia, and Málaga.

A culinary experience that awakens the senses


The Umániko menu, crafted with guidance from chef Enrique Martínez of the Maher group, offers a gastronomic journey blending international cuisine with local touches. The dishes, made from locally sourced, organic, and seasonal products, stand out for their flavor, presentation, and commitment to sustainability. Highlights include seasonal vegetable creams, eco-friendly broken eggs with carabineros and potatoes, and homemade desserts that delight even the most discerning palates.

In Madrid and Barcelona, this figure reaches nearly 100% when including individuals from vulnerable groups. Additionally, the restaurant implements sustainable practices such as reducing food waste and using efficient technologies.
