- ILUNION Atrium marks the starting point for this innovative concept, which will be gradually incorporated into 13 of the company’s 15 Special Employment Centers (SECs) in 2024. Both guests and visitors will be able to enjoy an international menu with local touches, carefully crafted to cater to a wide range of preferences.


Building on its renowned, unique, transformative, and socially committed business model, ILUNION Hotels — the hotel division of ILUNION, part of the ONCE Social Group — unveils Umániko, an innovative dining concept offering a one-of-a-kind experience. This new initiative is founded on accessible and inclusive dining, local cuisine, and responsible consumption. In recent years, ILUNION Hotels has established itself as a pioneering model and leader in universal accessibility, diversity, and the social and professional integration of people with disabilities within the tourism sector. This philosophy extends to Umániko, where 100% of the team comprises professionals with disabilities and those in vulnerable situations.
Umániko is born from the fusion of the words “human” and “unique,”, he two adjectives that define its purpose. Throughout 2024, this concept will be integrated into 13 of the company’s 15 Special Employment Centers (SECs) which are distinguished by employing a workforce composed of at least 70% individuals with disabilities. Gastronomy and “All-Inclusive” Spaces
Umániko embodies ILUNION Hotels’ commitment to sustainability by promoting responsible cuisine that minimizes waste and water footprint. The concept reduces red meat consumption while increasing the use of plant-based, seasonal, and certified products. Drawing inspiration from international cuisine with a local twist, Umániko celebrates the culinary heritage of each city where it operates. For instance, in Madrid, guests can enjoy a refined selection of wines aged in local wineries and other regional specialties, all available at ILUNION Atrium.
Its meticulously crafted culinary offerings, guided by renowned chef Enrique Martínez, of the Maher group, are designed to cater to all dietary needs and preferences. The menu features a variety of homemade and healthy specialties made with organic ingredients, promising to delight even the most discerning palates. This gastronomic journey celebrates a richness of flavors and origins, inviting guests to discover “the taste of diversity.”.
Umániko’s dedication to inclusivity is also reflected in its thoughtfully designed barrier-free“all-inclusive”spaces, ensuring everyone feels welcome and comfortable.In Madrid, the restaurant hosting the first Umániko stands out for its design, which mimics a natural, open environment connected to the city through large glass walls. The goal is to provide a serene and relaxing atmosphere, featuring eco-friendly decorative elements and an aesthetic aimed at evoking positive emotions. This design is based on actively listening to customer needs, demonstrating the commitment to delivering the highest quality service.


Innovation with Purpose and Alliances Against Waste

Aligned with the philosophy of zero-waste cooking Umániko partners with Too Good To Go to reduce the environmental impact of the food industry while promoting circular economy practices. Another testament to its strong sustainability commitment is its collaboration with Wim Estudio which has contributed to the décor of Umániko at ILUNION Atrium. Notably, this includes a mural crafted from repurposed sheets and other textiles, giving these materials a second life.
ILUNION Hotels offers dining experiences with a commitment that encourages more “Umániko” leisure choices. These experiences are available not only to hotel guests but to anyone wishing to enjoy a meal in good company at its restaurants, celebrate a special family occasion in its event spaces, or savor a healthy breakfast at the buffet. ILUNION Atrium marked the starting point of this concept, which will be gradually rolled out across the company’s SEC establishments throughout 2024. In this context, Umániko will open its doors at ILUNION Pío XII, ILUNION Suites Madrid, ILUNION Aqua 4 —located on the hotel rooftop— ILUNION Valencia, ILUNION Barcelona, ILUNION Auditori, and ILUNION Belart on October 14; ILUNION San Mamés on October 21; and ILUNION Fuengirola and ILUNION Hacienda de Mijas on October 28.
